Butter, one chopped onion, two potatoes grated on the big holes of a box grater, a can of corn with its liquid, two cups of milk, salt, more pepper than seems wise. Onion in butter three minutes, potato two, corn and milk in, simmer four.

The grated potato dissolves as it goes and thickens the pot for you. No roux. Nothing to wait for. Defiance wears an apron sometimes.
