Widest skillet you own, oil until it shimmers. Press the whole thing in as one thick coin. Four or five minutes a side, until the underside is lacquer-brown and it slides when you shake the pan. Cut in wedges. Splash of soy.
Two dollars. Three people. Hot food with a crisp edge and a soft middle. Nobody in this house goes to bed hungry because the week was hard — that's a rule I made a long time ago and I have never once regretted the cabbage.
