Ten oz of short pasta. A fat clove grated raw into a cup of yogurt with salt, sitting while the water comes up. Three tablespoons of butter with a teaspoon of red pepper flakes until it foams and goes rust-colored — thirty seconds, no more, it burns fast.

Toss the pasta warm, not screaming hot, into the yogurt. Bowls. Then the sizzling butter over the top, lemon, a handful of the pangrattato.
